BEHOLD MY ROLO COOKIE RECIPE!! CARAMEL FILLED COOKIES OF THE GODS!!!!
250 ml margarine or shortening
250 ml white sugar
250 ml brown sugar
2 eggs
10 ml vanilla
5 baking soda
175 ml cocoa or hot chocolate mix (cocoa for a rich dark chocolate and hot chocolate mix for the sweet light chocolate)
500-625 ml flour
50 rolos
Preheat oven to 350 F. Cream the butter with the sugars then add the vanilla and eggs. Beat well, add the soda and the cocoa and mix well.SLOWLY add the flour 125 at a time just until a nice soft dough forms and the dough doesn't stick to your hands. Cover each candy completely with a small ball of dough. Bake on an ungreased cookie sheet for 8-10 minutes. Cool then put into a container. Makes 50 cookies.
