Fast, tasty, and healthy quesadillas:
YOU NEED:
Whole grain tortillas
Shredded Cheese
Peppers, onions, tomatoes, favorite vegetables...
Frying pan
Vegetable oil, olive oil, butter, margerine, - some kind of lipid to coat the pan
Spatula
Coat frying pan. Heat pan until hot. While heating, start making the quesadillas. Cover half of the tortilla with cheese. Put vegetables of choosing on top of cheese. Put on another layer of cheese. Then, fold over the bare side of the tortilla on top of the full side. (Two of these can fit in a pan.) Place in pan. Cook until underside is golden brown. Flip. Cook until golden brown, or lighter.
Put finished quesadillas on a plate. Cut into three slices. Eat with salsa or sour cream. biggrin
EDIT: Vegetables can be easily obtained if you buy a "salad" at your nearest dining center on campus. Whole grain tortillas are available at most grocery stores.
