Harvested Sorrow Halo/Halo 2 and Morrowind all have some great music. biggrin agreed....also the intro to urban operations on pc is really cool...if youve ever heard it

GTA: vice city and San Andreas have really good music, then again they didnt create it so Im going with Halo 2. ( The one where they turn the theme music into heavy metal is awesome.)

Final Fantasy by far. Nobuo Uematsu is an amazing composer. The music he writes fits any moment in the story line and it's awesome.
