I still prefer the Universal Century series. The newer ones don't have much to offer but mechanics. I expecially liked 08th MS team. Seeing the war through the eyes of someone who isnt an ace pilot who can take on 10 guys at once and win really shows you how hard they have it. 08th also shows you how vulnerable a Mobile suit really is, especially the ones considered to be "Gundams". MS Igloo, which is a recent series and done in all CG, shows the One Year War of 0079 from a Zeon soldiers view rather than the Federation which was a nice change of pace, even if there are only six episodes.
