Besides the obvious (wand) I'd say a time-turner would be my favorite. They would also be really useful.

Does it have to be just one? The timeturner is a definate yes, as is the invisibility cloak. The Maurauder's Map too, but only if it could be magiked to tell about any place you go to.

The pensieve. I would use it every day.
I'd be able to remember all my good ideas, and get the bad memories out of my head. I could relive my favorite moments. It's the perfect item for me. Of course there is a danger I might use it too much for old memories and not make enough new ones. Self control...
