Blueberry Muffins
Ingredients for Blueberry Muffins
1 1/2 cups of All-Purpose Flour
3/4 cup of white sugar
1/2 teaspoon of salt
2 teaspoons of baking powder
1/3 cup of vegetable oil
1 egg
1/3 cup of milk
1 cup of Fresh Blueberries
Ingredients for Crumb Topping
1/4 cup of white sugar
1/3 cup All-Purpose Flour
2 tablespoons of butter (melted)
1 1/2 teaspoons of ground cinnamon
Directions
Preheat Oven to 400 degrees Fahrenheit.
Grease Muffin cups or line with muffin liners (I used Muffin Cups)
Combine 1 1/2 cups of flour, 3/4 cups of sugar, salt and baking powder.
Add Egg into 1/3 milk measuring cup and add vegatable oil untill it reaches ONE cup. Then mix in with flour mixture. Then Blend Once it looks similar to this picture. Then you add the Blueberries in and GENTLY mix it in with a spoon. Then Fill the muffin cups and sprinkle with the Crumb Topping Mixture.
Directions For Crumb Topping
Mix Together 1/4 cup of sugar, 1/3 cup flour, 2 tbsp. butter and 3/4 tsp. cinnamon. Mix with fork and sprinkle over muffins BEFORE BAKING!
Bake for 20 to 25 minutes or untill done. Once finished remove carefully and set to cool on counter for 10 minutes. Then with a butter knife cut around edges of the Muffin to loosen then remove. Then you stuff your face.
