A friend showed me how to make this super-easy guacamole when I was in Vegas last summer. I especially love recipes that can be easily altered for quantity and flavor, so this one was right up my alley!
Just a note: ALL quantities can be altered depending on your tastes - i.e. do you like more tomatoes? Great! Add more tomatoes!
Ingredients:
4 medium avocados
2 small cans diced tomatoes w/ green chilis
1 Tbsp. garlic pepper
2 Tbsp. lime juice
1/4 c. sour cream
Directions:
Slice open and pit avocados. Scrape insides into bowl. Use masher to mash avocados to desired consistency (I like it a little chunky). Open both cans of tomatoes, but drain only one of them. Pour the drained and undrained can of tomatoes into bowl. Stir thoroughly. Add all other ingredients, stir well. Enjoy with favorite corn chips! (I personally like the scoop kinds because you can get a lot of guac in them!)
