hey - this is my noodle recipe thread! User Image

this thread is still very very new! so please forgive me for the wait, while i add some recipes.

please refrain from adding your own recipes at this time - this thread is still very much under construction.

we heart noodles

Kitsune Udon

kitsune means fox - which, like aburage are thought to have supernatural powers.


Ingredients: (for 4 servings)

User Image 4 packs of udon noodles
User Image 6 cups of ichiban-dashi
User Image 1 teaspoon sugar
User Image 1 Tablespoon mirin
User Image 1/2 cup usukuchi (lightly flavored ) soy sauce

Kitsune (cooked seperate)
User Image 4 pieces of aburage, niban-dashiUser Image
User Image 3 Tablespoons sugar
User Image 4 Tablespoons usukuchi soy sauce)

User Image 1 green onion.

Preparation:

Noodle's soup
User ImageHeat up ichban-dashi - add sugar, mirin, soysauce.
User ImageTurn off gas before it comes to a boil.

Cooking aburageUser Image
User ImageCut in half
User ImageTo remove oil, place aburage in scalding water.
User ImageIn a different pot add sugar to niban-dashiUser Image - add aburage.
User ImageAfter flavor seeps in, add soysauce and heat up for 3-4 minutes.
User ImageTurn off gas. Allow flavor to seep in further.

Yakumi (Topping)
User ImageThinly slice green onion. Soak in water, then dry.

How to Make:

User ImageBoil udon and drain.
With partially cooked udon boil in hot water to heat up.
With dry udon add noodles slowly to boiling water. Bring to boil again and add 1 cup water. Boil 10-15 minutes. Add 1/2 water, bring to a boil again. Drain noodles.
User ImageSave leftover noodle water to warm serving bowls.
User ImagePut noddles in empty warmed bowls. Add aburage (i per bowl) then heated up soup (tsuyu)
User ImageGarnish with sliced green onion.

User ImageTo remove oil, place aburage in scalding water
User ImageDrain abrage
User ImageSqueeze lightly
User ImageIn a different pot add sugar to niban-dashi -Add aburage
