I know once they get into a fight it's really cool and luffy, sanji, and zorro kick the crap out of other guys...but, what happens to them after they beat them? Are they dead,alive, or in a prison cell at a local marine station? confused

Well if you notice the first chapter covers for the One Piece Manga, you will see some of the adventures of the daunted villans. Take Wapol for example: For a long strain of chapters, the covers told the story of how he became a toy tycoon and eventually married Miss Universe. Jango's Dance Paradise explains how he ended up a Marine, and the latest chapters explain what happens to CP9, where they desperately evade Marines while trying to save Rob Lucci.
These can be found on the covers for each chapter at OneManga.com. I've already seen the Adventures of Buggy, Ace's hunt for Blackbeard, Jango's Dance Paradise, Koby and Helmeppo's Chapters of Toil, Hatchi's Undersea Adventure, Enel's Journey to the Fairy Vearth, and am currently reading CP9 Report.

First of all, I can answer a major part of your question by saying this: None of the villains in One Piece die. Oda himself has stated that. In fact, the reason Luffy never kills the villains in One Piece is because by defeating them, he's shattering their dreams, and in many ways, that's a worse punishment than death.
That said, different things happen to different villains, but a lot of them end up being arrested by the Navy for some reason or the other.
