New games release, old games die. Only a certain few actually stay at the top of Xbox Live.
Halo, Gears of War, Call of Duty, Rock Band, Guitar Hero, Grand Theft Auto (etc).
Do you own them all? ;D

I don't have Rock Band and there's no Live multiplayer for Guitar Hero, and out of the games you listed, I only play Call of Duty 4. Rainbow Six Vegas 2 deserves a nomination too.
