the master is suppost to be the oldest vamp on record i thought, but kakistos is so old his hands and feet are cloven, so why didnt the master have cloven feet? sad this has been driving me crazy lately!! scream

It's kind of left up in the air as far as the series is concerned, but my personal theory is that as vampires get older they begin to look more and more like their inner demon and less like the human that they once were. Just as different types of demons look different, different vampires would look different as they change as well.
The only problem with this theory is that they specifically state in the show that all vampires were created when a single demon fused with a human and found that it could make more creatures like itself. Since all vampires are therefore descended from a common ancestor, it would make sense that as they grew older they should look more and more like him (thus, they should grow to look the same). Personally, I thiunk it's just a minor plot inconsistency.
I guess another way to look at it would be that they each grow to represent a different aspect of the original demon, but that's kind of stretching it.
