Raspberry Pudding - Delicious, Nutritious, and Easy! Makes 4 (small) servings, but will serve 2 decent sized bowls
You need a blender or food processor 1 of those antisceptic packages of Silken Tofu, 12.3oz (Avoid using the kind immersed in water in the fridgerated section, silken or otherwise. I used it once and it came out tasting more like tofu, believe it or not!) 8oz frozen raspberries (or fruit of your choice, You could probably use fresh if on hand) 2 TBS honey (or to taste for the sweet teeth out there) 2-4 mint leaves for garnish (optional)
Set aside mint leaves and few raspberries for garnish. Run under cold water to thaw garnishing berries. (optional)
Blend all remaining ingredients in a blender or processor until smooth. Spoon into bowls (rubber spatula is ideal) and garnish with mint leaf and a few raspberries if desired.
I've also used Banana (fresh), Strawberries, and tonight, Blackberries in this recipe instead of raspberries, and they have all turned out delicious. I think the blackberries needed extra honey though.

Do you mind if I use this recipe in my food technology class? It sounds delicious, and fairly easy to make.
I think my cold must be wearing off..food is beggining to appeal again!
