Lemon Bars
1 1/2 cups plus 3 tablespoons all-purpose flour 1/2 cup plus 1 tablespoon confectioners' sugar 3/4 cup unsalted butter (1 1/2 sticks), cut into pieces 2 large lemons 3 large eggs 1 cup granulated sugar 1/2 teaspoon baking powder 1/2 teaspoon salt
1. Preheat oven to 350 degrees F. Line 13" by 9" baking pan with foil, extending foil over the rim; lightly grease foil. 2. In medium bowl, combine 1 1/2 cups flour and 1/2 cup confectioners' sugar. With pastry blender or two knives used scissor-fashion, cut in butter until mixture resembles coarse crumbs. Transfer crumb mixture to prepared pan. With floured hands, pat firmly onto bottom of pan. 3. Bake until lightly browned, 15 to 17 minutes. 4. Meanwhile, from lemons, grate 1 teaspoon peel and squeeze 1/3 cup juice. In large bowl, with mixer at high speed, beat eggs until thick and lemon-colored, about 3 minutes. Reduce speed to low. Add granulated sugar, remaining 3 tablespoons of flour, baking powder, salt and lemon peel and juice; beat, occasionally scraping bowl with rubber spatula, until blended. Pour lemon filling over warm crust. 5. Bake until filling is just set and golden around the edges, about 15 minutes. Transfer pan to wire rack. Dust remaining 1 tablespoon confectioners' sugar over warm filling. Cool completely in pan on wire rack. 6. When cool, cut lengthwise into 3 strips, then cut each strip crosswise into 12 pieces. Makes 36 bars.

Not really a recipe, so much as a yummiful and easy snack.
Bagel- lightly toasted, top with (prefferably whipped) cream cheese and sprinkle with sugar. Enjoy.
As an alternate to the sugar, fruit-flavoured jams and preserves are also quite tasty.

i'm really happy...my chocolate cake went down really well at our picnic today! everyone seemed to love it *feels proud*
