Yesh, I though that since you already like some excellent series (=Mai HiME and Mai Otome XD), I'd like to hear what other animes you'd recommend. :D
I bet that everone has a different taste in anime, so there will be a lot of differences in the animes people are going to list, too - and that's what makes this so interesting. :'D

Inuyasha-the anime that got me into anime
Fullmetal alchemistSayonara Zetsubbut ou Sensei- Goodbye Mr. Despair
xxxholic- i love clamps uniqe art style and the stroy telling in this anime/manga it is very gothic but, heart warming
bleach and naruto- well i like them to an extent but they get annoying after a while
Deathnote-i felt weir reading this manga for awhile cause when i bought it people kept giving me these stares- i'm preppy( in sterotypical terms) so nobody i think expected me to like somthing called deathnote let a lone manga at all~ XP
Mushishi- the stories are told in a very first persony sort of was. Ginko is kinda emotionless so i think that was the manga ka's goal- ot make the reader feel like they're experiancing everything not ginko.
Princess ressurection-kinda new and githic but, i love it anyway

FLCL- confused me but i still liked it
