His sex appeal. Just imagine if he showed the other one.
Yoko, Nia, Darry, Simon, Rossiu... everyone would be up

...Y'know, that could be it.
Or maybe his eye is just a terrible mutation and he knows that if anyone sees it they'll die because of it's ugliness.

I think it's just for looks and character but if we're really looking for extra reasons why we never see his right eye I'd be tempted to say it's another of many tributes to Matsumoto Reiji's work (his popular creations include Space Battleship Yamato, Captain Harlock, and Galaxy Express 999), but that'd be a stretch.
Matsumoto had a knack for drawing nearly all his characters with the right eye covered. His stuff is from the late 70's into the mid 80's but looks and feels much older. It's nostalgeic for the people who were there at the time.
Other Matsumoto Reiji (or Leiji...) tributes in Gurren Lagann include the shape of Hyperdimension Gurren Lagann in ship form, which looks a lot like Harlock's Arcadia; Kamina's father, Kamina, and later Simon all take a likeness to Captain Harlock aswell. The very beginning of the series shows Kamina's dad and a spaceship which resembles Arcadia (it's H.G.-L.) ; Dai Gurren walking fortress has a "wave motion gun/cannon", which is a homage to S.B. Yamato.
In other notes, that "Hyperdimension" is a homage to Macross. I could keep pointing out more homages paid to old anime and manga, but the Brigade must march on!
Yosha! Tributes to Retro Anime make people of my generation and the older ones happy!
