"The Melancholy of Haruhi Suzumiya", simply because it's the only anime I've seen the entire series of. And it asks some high-concept questions about the order of t'ings in a manner that even I can understand.
(They need to make more! Why haven't they made more?)

Also, "Scrapped Princess" and "Rumbling Hearts" are two series I have seen recently and can easily recommend.
