Kenshin himself was awesome. And funny, when outside the battlefield. The whole show is excellent (mind not the dumb fans who'll say "it sucks after Shishio's arc") and displays a lot of real sword techs along the way (most of Kenshin's techs are doable, if not easily.)
My favorite characters, other than Kenshin, were Misao Makimachi, Soujiro Seta (the smiley, speedy kid who was working for Shishio,) Yumi (Shishio's girlfriend. Her death scene's one of the best in the show,) and Hajime Saito (the Gatotsu style is IMO one of the best styles in the show.)
My favorite arcs are the Juppon Gatana battles (the final episodes of the Kyoto arc,) the Amakuza arc and the one with the band of rogue ninjas and those stupid knights (Black Knights, I think. It was worth dealing with their idiocy if only to see Kenshin defeat a giant spear with his sword.)
One note on the show: Kenshin's sword didn't exist before the show was aired. Fans ordered swords to be done as collectibles, and some even had real swords done (as in, they had their edge in the back, just like Kenshin's sakabatou.)

I both love the anime and manga, which is saying something. I haven't watched the anime in ages ... I should go back and look up the episodes. x33

"The" theme song is a bit subjective.
The show had, not counting the many movies, three OPs and seven EDs.
OPs I remember off the top of my head:
Sobakasu (Freckles.) 1/2 Kimi Ni Fureru Dakede.
EDs:
Tactics The Fourth Avenue Cafe Dame! It's Gonna Rain Heart Of Sword 1/3 No Junjou Na Kanjou Namida Wa Shitte Iru
My favorite song from RK wasn't one of those tho, it was called "The Juppontou" and lasted eight minutes (it was a J-Opera. surprised )
