This is a delightful Thai soup that my mum makes all the time, and we all love. It has a lot of ingredients, and is a bit of an aquired taste, but it's quite good! So! here we go!
INGREDIENTS: 1 1/2 lb of raw prawns. 2 tbsp oil (canola, olive, or vegetable) 3-4 stalks of lemon grass, outer leaves removed, chopped coarsely 1 inch piece of ginger, peeled and diced 2-3 garlic cloves, peeled, crushed, and diced a bit of coriander, remove the leaves, dice the stems. 1/2 tsp pepper 6 1/2 cups water 1-2 small chillies, seeds removed, finely chopped 4 spring onions, sliced on diagonals 1-2 tbsp fish sauce 1-2 tbsp lime juice

DIRECTIONS
Remove heads from prawns. Peel the prawns, and devein (or buy with this already done, for ease) Rinse and dry the prawns.
Heat a wok or large frying pan (wok is recommended), add oil, and then fry together lemon grass, ginger, garlic, coriander stems and pepper for a few minutes. (2-3 mins)
Add water to wok, bring to boil, skim off any sort of scum that comes to the surface (i know it sounds gross, but it's not) Simmer for 10 minutes or so, until the water has slightly reduced in volume.
Strain the soup into a large bowl, discard the stuff that stays in the sieve. Return liquid to wok.
Bring the stock back to a boil, add in prawns, chillies, and spring onions. Simmer for 3-5 minutes. Season with fish sauce and lime juice.

Sounds tasty! : D I've seen the chinese version of this, and they don't add prawns(which are really good) I might try it cool
