Maybe I'm just plain stupid, or maybe I'm lacking some kind of knowledge. I've tried to figure out where the 'Ai' comes from, but I just can't. I'm pretty sure I've got the 'Roy' part down, though.
Mods, you can lock and delete this after I get some kind of answer. And I'm indeed very sorry if it is as stupid a question as I'm feeling right now.

No, dont worry. We probably should have explained.. ^^;
This name was stolen from the Japanese fans, who call it 'Roiai'. It means the same thing, they just romanized it directly from the katakana.
Keeping in mind that their names are supposed to be English names...
Roy/Roi = Roy's name, obviously. Roi is the direct furigana translation from the Japanese script, but on all official documents with his name in English, it says 'Roy' (even in Japan).
The 'Ai' part comes from the English transliteration of how Riza's name is spelt in Japanese: "Hookuai". 'Ai' also means love in Japanese.
So, to make a long story short, you could say it's shortened from 'Roi/Hookuai' or 'Roy/Hawkeye'. The 'Ai' part is a word pun because 'Ai' means love in Japanese, so you could say it means 'Roy/Hawkeye love'. ^^ It is also sometimes called Royeye in English. All Riza pairings are like this; HavocAi = Havoc/Riza, ArmstrongAi = Armstrong/Riza, etc.
Japanese Royai fans are really obsessive... there is in fact a Royai Day created by the Japanese fans. June 11th, for those interested. XD I wrote a fic for it. heart

What's weird is that when I thought of Roy/Riza I immedietly though RoyAi. o_o; I thought it 'cause like.. Roy's name and Ai can mean love in japanese. I usually think in Hawkeye's perspective 'cause... She's just so awesome heart

I was confused about this, I just made up a theory in my mind that they just play around with the letters in Riza's name. Also, I had been trying to figure out how to spell Roy's name in Japanese. This was a very good explanation...There's a RoyAi day? XD
