Mine Gotta Be Hellsing and Cowboy Beebop so far. Their music is like none other from the other anime series. The have more of a mature western/blues/rock touch to it. Especially the Hellsing soundtrack is awsome.

Oh yeah, I love the Naruto OST also. The mix of rock and tradition folk music gives it a good touch.

i've only heard a few osts. I really like Victorian Romance Emma's.
Also have fma, bleach, naruto *current far as i know*, scrapped princess, full moon sag, and i think thats it, i lost slayers crying
