I dunno about all you guys out there, but I adore twists on salad, and this simple recipe is a heavenly item to serve any time of the year for any occasion, though I prefer it in the summer, when everything is in season and available at the local market fresh.
For the Salad: -1 head of washed romaine lettuce, broken into bite-sized pieces, or if that's too much, simply fill a large bowl with the torn leaves. -1 cup slightly crushed pecans -1 cup Frasier strawberries, cut into slices lengthwise -3/4 cup fresh raspberries -1 lime -1/2 cup grated carrot
Toss all ingredients into your favourite salad bowl. Garnish with a bit of lime juice, and sprinkle with a bit of parmesan, if desired.
For the dressing: -1/2 c. raspberry vinegar -1/4 tsp. salt -1/4 tsp. pepper, fresh ground -4 tsp. sugar, or more to taste -2 garlic cloves, finely chopped -1 tbsp. Dijon mustard -2/3 cup whipping cream -1 1/2 teaspoons poppy seeds, lightly toasted -1 teaspoon toasted sesame seeds
Combine all ingredients in a medium sized bowl, stir. Transfer to a dressing pitcher for serving, and place leftovers in a jar and refrigerate, it will likely last you a little while.
Enjoy!~

Just FYI for those who find it hard to get raspberry vinegar, you can use a sweeter vinegar like red, champagne, or cider and put a little raspberry jelly/jam in it.
