Hey guys! I know I haven't been all that active lately. It's been a rough couple months, but I'm back, and I have a new recipe for you that I threw together last night over what was around my kitchen. I have trouble translating recipes into measurements, because I hand measure everything. x-x :3 This italian-inspired dish was quite a hit with my coworkers(my ex said I should get hot steamy secks for it), so hopefully you share the same success!
-1 1/3 cup heavy whipping cream -olive oil -5 tablespoons butter -Juice of 1 lemon -2 fresh artichoke hearts, minced -2 ripe tomatoes, diced -1/3 cup chopped green onion -1/2 cup broccoli, finely chopped -4 cloves crushed or minced fresh garlic -1/2 teaspoon cracked pepper -1 sprig fresh thyme (you can strip the tiny leaves by pulling it through your thumb and finger) -1 teaspoon minced fresh parsley -1/4 teaspoon dried oregano -1/4 teaspoon crushed rosemary -1/4 teaspoon dried basil -1/4 cup crumbled feta cheese -3 cups small pasta shells -salt to taste
After all your ingredients are prepared, start your pasta on the heat in some lightly salted water.
Heat cream, lemon juice, and butter on medium heat until butter is melted, stirring slowly and constantly. Turn the heat down to a simmer, and add the garlic, herbs, pepper, and green onion, allowing the mixture to steep for five minutes. Add tomatoes, broccoli, and artichoke hearts, and simmer covered for ten more minutes or until vegetables are tender, stirring occasionally. Add salt to taste. When your noodles are finished, take about a third cup of the starchy water and add it into the sauce (this will help the sauce emulsify), then drain your pasta in a strainer. Transfer shells to a large bowl and toss with a very small amount of olive oil. Pour sauce over it, and top with all of the feta cheese. Serve hot.
(This would go great with chicken breast or shrimp, I just didn't have those things in my house at the time. It's wonderful by itself, though. xP I'll be fed for the next few days.)
