The only Harvest Moon Cookies that I know are a variation of the Chinese Harvest Moon Cakes...I hope is the right one...
Ingredients: 2 cups flour 1 teaspoon baking soda 1 teaspoon salt 1 cup butter 3/4 cup sugar 3/4 cup packed brown sugar 2 eggs 1 teaspoon vanilla extract 2 cups uncooked oat flakes 1/2 cup chopped black walnuts 1 cup dried sweet cranberries
Directions Preheat oven to 375 degrees. Sift flour, salt, and baking soda. Set aside. Beat together butter, sugars, eggs, and vanilla until light and fluffy. Stir in flour mixture and oats until well combined. Add walnuts and cranberries. Drop by rounded teaspoonfuls, 2 inches apart, onto cookie sheet. Bake 10 to 12 minutes until golden brown. Let stand 1 minute before removing and cooling on a wire rack. [you should be able to make...uhm..6 dozens of them with this recipe]....
