My older sister decided to go vegan almost two years ago, but I'm finding there are a lot of things she refuses to eat and I'm kind of curious about what she could live off of.

First off, she developed a sudden peanut allergy- which she carries an epipen for, but has not gotten an allergen test to check if that's what she reacted to. She also refuses to eat wheat- but eats rye bread- which contains wheat gluten to puff it. Strict vegan, no dairy or egg products. I know she eats copious amounts of tofu, but refuses to eat beans or most of the haricot family. Citrus is also out, as are anything in the onion or garlic family. She eats a lot of eggplant and peppers- but it's the same recipe every time. Cranberries, mangoes and blueberries apparently affect her adversely. Bananas are still okay. Potatoes are okay, and I've seen her crack more than one bag of chips. Curry flavoring is also either too hot or sweet for her. She will also eat only one particular brand of margarine, and I see nothing in the label that sets apart spectacularly from any other type.

I guess there are quite a few things she could theoretically eat, but she refuses normally on the grounds of the things she feels will set off an allergic reaction.

My first question: on the basis of what I've presented- does she get enough vitamins and minerals of enough types?
Second: Are there some recipes that would follow her very strict guidelines in terms of food out there, or is it make it up as you go?
Third: How do sudden onset food allergies work- and exactly how sudden is sudden?

I might seem completely ignorant of her lifestyle, but she won't eat anything I provide- unless she's in my kitchen with me, on the basis that I could kill her. I have looked up recipes, and made substitutions when she has been around, but I am getting tired of being told I'm completely off track if I go away from peppers and eggplant. I also find what she makes tends to be devoid of flavour, aside from the flavours you find naturally in each ingredient- like in a salad.

wow that sounds like a super crazy diet.
i'm not a dietitian or anything fancy like that, but it really seems she's picking food at random. does she eat other fruits and vegetables? leafy greens and such?

I'm surprised about the tofu thing, does she realize it's made from...soy beans? Eating too much of anything can really hurt you, no matter what it is. Also, most soy-based products are GMO so that's a bad idea. Unless you get only organic tofu, then you're safe.

1) I would lean towards no but I could be wrong. There are some good books you can probably take out from the library that have lists of the sort of diet you need: Becoming Vegan and the Thrive Diet are good places to start.

2) I would search on google with some of the vegetables. I do it sometimes and there's a lot of good vegan food blogs and stuff out there.

3) I honestly have no idea. But I heard you can pretty much get them any time.
