what exactly does he mean by that?

Yes, but no matter when or how Ianto dies, it will be a painful parting for both of them. Mostly Jack as he will outlive all his loves. except the Doctor, but his timeline is to odd to think about

Well, its quite obvious that they have strong feelings for each other, but I am not completely sure it is deep love (as much as I want it to be.) But, I feel that as the seasons go on, and as they stay together, the love will build and there will be a point were Jack will actually admit his love to Ianto. (we alll know its going to happen, don't deny it.)

Yeah, it's going to be sad for Jack, but when Ianto's gone, Jack'll have no regrets about the relationship (we hope!). I think it keeps him human, being in love.
