I'm asking this because sometimes, I see hiragana being used when there is a kanji for it. For example, take the word さくら。That can also be written as 桜, and that confuses me, because I don't know when kanji should be used and when hiragana can be used, or if they can be used interchangeably.

It typically reflects how advanced the vocabulary of the person is, and also helps distinguish one word from another.
For example: about 8(maybe more) different kanji(which can mean old ways, a kind of fish, love, request, intention, dark color) can be said as "Koi" if you wrote it in Hiragana, would others be able to tell the context in which the word is said and it's intended meaning(another thing to consider when speaking the language)?
