Chicken Potato Curry From: JadeTeardropz
If cooking for 4-5 people... Ingredients
2-3 boneless, skinless chicken thighs: cubed/sliced (again, if you're a vegan or vegetarian, you can omit this)
5 med/large potatoes: peeled and cut into bite size pieces
1 med/large onion root (either yellow or white): cubed
1/2 a bunch of cilantro: chopped up
2-3 stalks of green onions: chopped up
3 pieces of garlic: chopped/minced up
one small can of curry: your choice (I prefer the red curry, but it is spicy...)
one reg size can of coconut milk: make sure it's not the desert kind... it'll make your dish sweet.
Cooking Instructions:
On med-high heat, heat up in a wok/frying pan about two tablespoons of oil. When hot, add the garlic and onion root. Carmelize it.
Then add the chicken. When the chicken is about halfway cooked, add the potatoes. Pour enough water to just cover everything and bring to a boil. Then add the curry, coconut milk and salt and black pepper to taste. Reduce the heat and let simmer until the potatoes are tender.
Right before turning off the heat, add the cilantro and green onions.
Can be served with rice, pita bread... or anything else!!! (I prefer the rice or pita bread... !!!! )
