It's Sherlock Holmes vs. MacGyver!
My thoughts: MacGyver is smart but he's more of a knowledge-smart. Despite his great resourcefullness and adaptability he never demonstrated the kind of scientific method or logical acumen that our man in the deerstalker did. So lets make it fair: a contest of chemistry! Both of these gentlemen demonstrated great skill in chemistry.
