I love avocado. I'm a little limited with my avocado options, though. I make a great bowl of guacamole and an excellent turkey-bacon-avocado sandwich, but what else can I do with this delicious little fruit?

I'm not really much of an avocado person... (mostly too expensive to bother with on a student budget razz I'd rather buy a kilo of potatoes for the same price). But you could always just eat it plain with lemon juice.

My dad likes eating crepes by wrapping smoked salmon and avocado in them, if that takes your fancy. O_o

That sounds pretty good!

I also like to eat fajita tacos with some caramelized onions and slices of avocado in it.. And a squeeze of lime.

You can make yourself a sweet little dessert with it. All you have to do is scoop out some avacados and roughly break them up with a spoon. After that, you can add some carnation milk and some sugar to it.

It's a quick and easy snack to make ^_^

That actually makes a lot of sense. Avocados have a slightly sweet flavor to them!

I sure do love avocado.

Because its high time I paid more attention to this guild, but I tend to forget about the guilds I'm in...

The avocado shake...much beloved by Filippinos and Vietnamese. The end product is like a rich milk shake, and any vegetal flavors are completely gone.

I'm going to post this in the vegetarian forum too, but I wanted to let you see it in this thread as well, since you're looking for it.

The catering company I work for serves this avocado bread with rich black coffees for breakfast, or as a sweet side to cool down the burn of high spice Latin American foods.

INGREDIENTS:
* 1-1/3 cups all-purpose flour
* 3/4 teaspoon baking soda
* 1/2 teaspoon baking powder
* 1/4 teaspoon salt
* 1/4 teaspoon ground cinnamon
* 1/4 teaspoon ground allspice
* 1/4 cup butter, softened
* 3/4 cup and 3 tablespoons white sugar
* 1-1/2 eggs
* 3/4 cup mashed ripe avocado
* 1/4 cup and 2 tablespoons buttermilk
* 1/4 cup and 2 tablespoons chopped pecans
* 1/4 cup raisins
* 1-1/2 teaspoons grated orange zest

DIRECTIONS

1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9x5 inch loaf pans. Sift together the flour, baking soda, baking powder, salt, cinnamon and allspice. Set aside.

2. In a medium bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs one at a time, then mix in the mashed avocado. Stir in the dry ingredients alternately with the buttermilk until just mixed. Fold in the chopped pecans, raisins and orange zest and pour it into the pan.

3. Bake for 1 hour in the preheated oven, or until a toothpick inserted into the center of the loaf comes out clean. Allow loaves to cool in pan for at least 20 minutes before removing.

My mother makes a very nice avocado salad.

Ingredients:
2 avocados
1 apple
2 table spoons of wine vinegar
1 tea spoon of Dijon French mustard
1 table spoon of parsley
2 minced shallots
A pinch of thyme and a pinch of chervil
Salt and pepper
5 table spoons of olive oil
The juice from a quarter lemon
An egg yolk

Make avocado slices and apple slices. Add in a little lemon juice so they don't turn brown and put aside.
Now for the dressing:
Mix the vinegar, mustard, shallots, herbs, salt and pepper. While mising with a whisk, slowly add the oil, then the yolk.
Pour on salad and serve. ^^

Another nice avocado recipe, though, I'll have to admit, not cheap.

Ingredients:
2 avocados
A can of crab
2 celery sticks, chopped
2 green onions, chopped
Half a green pepper, chopped
Salt and pepper
Lemon juice
Half a cup of grated Gruyere cheese
A cup of bechamel sauce

Cut the avocados in halves and remove the pulp. Keep the empty rind, as you'll need it later.
Mix the avocado pulp with the crab, the vegetables and half the cheese. Add salt and pepper as you wish.
Put the mix in the avocado rinds and cover with the rest of the cheese. Put in an oven on "broil" for 6 to 8 minutes.
Pour on bechamel sauce and serve.

You can also replace the crab with lobster, shrimps or tuna.

This is sorta like guacamole, only it's veganized. Just mix the avocado with Pace Picante Salsa and eat it with chips. A cheap, satisfying snack I often like to consume.

I wonder how well that would work without any meat...?
But that sounds awesome. Really. It's like it's almost gourmet! =P

I remember my little sister made a avocado milk tea. It was pretty good. That's the first and only time I'm tried avocado in my life so far soo I can't tell you anything other things to make from it sweatdrop

She just mashed/or crushed an avocado(after removing from it's...y'know skin xD). After that she put it inside a blender with milk, sugar, and crushed ice. Then she blended it all up until frothy.

I don't know the exact measurements for everything, but I do know she just used one small avocado.

I like to do a couple of things with avocado:

1. combine it with a can of tuna and eat it together. I dunno why, but I tried it one day and it tasted good.

2. I like to just eat it with lemon juice, garlic powder and a little pepper.

3. I like to spread avocado on toasted bread
