Ingredients:
2 Boneless, Sklinless Chicken Breasts 4 Slices Prosciutto di Parma, sliced deli thin (Boar's Head Proscuitto is a good substitue) 2 each Medium Roasted Red Sweet Peppers (Jarred is OK!) Salt Pepper Paprika
Pound out the chicken breasts so that they are flat. On top of each chicken breast, layer 2 slices of prosciutto, and one red pepper (slit down the center so that it lays flat.
Roll up the chicken breast, and place it on a sprayed baking sheet seam side down. Sprinkle spices on top.
Bake at 350 degrees for 20-25 minutes, or until juices run clear. To serve, cut down middle and open on plate.

Do you suggest flattening the chicken breast for this? It sounds so yummy.. I love prosciutto.

Absolutely! You don't want them to be paper thin, but about 1/4" thick all the way across
