What you will need:
Orza Pasta (Looks similar to rice)
Sun Dried Tomatoes (3 or 4 per salad)
Broad leaf Parsley (can be seperated for several salads)
Thyme
Oregano
Lemon or Orange (if orange, also add a bit of the orange juice)
Olive Oil
This will be for 1 serving. 3nodding
First measure out your pasta for your single serving. Some people eat more pasta than others, some less so just measure out how much you want. Get some water boiling and put the Orza in to cook to your prefured pasta tenderness. While that's cooking take your sun dried tomatoes and slice them up thinly; again the amount chosen on personal preference. Next chop up the parsley and thyme in a similar fashion, making them smaller. Finally take the lemon, and a zester if you have it, and peel away several strands of the lemon rhine. If you don't have a zester, a sharp knife will do. Be sure to slice the rhine very thin.
Hopefully by now your Orza is done; drain and put back in the pot. Add about a tea spoon of olive oil, or lightly drizzel over the Orza. Next add the tomato, the parsley, thyme and some lemon rhine. Toss together and enjoy your pasta salad. This dish is vegetarian, but meat can be added, sausage is one idea to kick around, or perhaps a bit of chicken/turkey.
