First major rule is DO NOT BAKE THE FISH WITH SALT, this usually drys the fish out. If you want to add salt do it after it is cooked. As for recipes what type of fish are you going to cook?

You know what tastes the best? Wrap fish in tin foil and place it over a hot wood fire my dad did this with halibut and it was excellent!

To serve with baked fish? I would do a creamy risotto and pan roasted fall vegetable dish, or a balsamic green bean or asparagus dish. If you want specific recipes PM me.
