Does anyone have any tips for an epeeist for infighting? Every time I try to use decent infighting strategies my opponents back off leaving me in some strange contortion that is not good for regular distance fencing. Any advice for recovering from infighting stances in a hurry?

This is another one of these situations I'd have to see. Either you are crossing your feet oddly and thereby limiting your ability to infight, or you aren't able to snap back into form fast enough. Either way it is an issue with you not adhering to a strict enough stance while you are infighting.
My other solution: DON'T INFIGHT!!! It throws you off anyway and you shouldn't expect victories out of those battles. It is better to work on your accuracy and pick at your opponent from far away, occasionally coming in for a quick shot close in to throw them off. But ALWAYS have a retreat plan. That is what your opponents are doing, because infighting isn't an advantage. Plus, if they can leave you in an awkward position and have free shots from proper distance, they're going to take them. This is Epee, it's all about patience and purpose.

I wish I could follow the advice of not infighting, but unfortunately, that is how many people score points on me. Being six and a half feet tall, I enjoy keeping people at a distance, but my opponents often find that the only way they're going to get any points is to get inside my long range and beat me at extreme close range...which they do... I find it's just one of those things that are a necessary evil to have available to you.

Then you need to work on speed and distance control, simple as that. You are the tall one so you should have control of what's going on. Their only strategy should be to pick at your form and only attack exposed parts of your body, such as your arm or toes.
Even then, I've seen several infighting techniques that work very well for tall fencers. Around the neck works well because you can use your height as an advantage and strike downward at your opponent where they can't defend very easily. The best way to discourage infighting is to discourage them from attempting it. Aggressive blade work, don't be afraid to snap their head back for coming too close. Point to face.
