I have a new favorite recipe that I like to call "HOLY FLAMING TOFU, BATMAN!"

It's tofu, an onion, about 5+/- chile peppers (of your favorite variety), and your favorite stir fry sauce all diced and cooked up in a skillet and then served over rice or cellophane noodles)... it would probably go well with other noodles, too.

It's hot. It's WAY hot. I love it soooo much.

I made this up for dinner last night. Dicing the vegetables is the most time consuming part, but that didn't take me too long either.

1 baby eggplant, diced
1 tomato, diced
1 medium onion, thinly sliced
fresh garlic, crushed or minced (as many cloves as you like-- I like a lot of garlic)
a handful fresh (baby) spinach
olive oil for cooking
salt & pepper to taste (I'm ashamed to admit that I like quite a lot of salt, also.)

I put the olive oil into a skillet, along with the eggplant, tomato, onion, and garlic and cooked that at medium-to-low temperature until all the vegetables were tender. Quite a bit of water came out of the vegetables, but I cooked most of that off too. When everything else was done, I threw the spinach in and cooked it until it was wilted, and then I seasoned it with the salt and pepper.

I think this might be nice with some toasted Italian bread, and if you eat dairy, some mozzarella or provolone melted on top would probably be fantastic. As for me, I just ate it the way it was.

yum, only cooking ive been doing is making up some noodles and adding lemon juice lil salt bit of pepper some garlic powder and some other stuff i cant remember lol

That actually sounds really good to me.

I have to go to the dentist this afternoon, so I think dinner is going to be something really simple, like grilled cheese and tomato soup.
