Some people post the whole story at once while some post a chapter at a time and then update when they finish the next. Please discuss how this affects you as a writer and a reader here.

I think I should be the former type, so that I don't generate disappointment for myself and others... however, I am the latter, and I rarely complete my stories because of it.
As a reader, I like completed stories so that I'm never left hanging. Sometimes I'll read an updated story... but I find I never return to see where it goes.

As a writer, I'm pretty much like you, Pawn. I really wish I had the discipline to write out a fic from beginning to end before showing it to anyone. I tried to do it once, but that failed nicely. I think that the excitement of knowing that it's out there for others to read and pick apart actually helps to keep me interested in seeing it through to completion... for a while at least.
As a reader, I am very loyal when the fics catch my attention. If the story is worth it, I don't mind spending months on end waiting for updates. Of course, I hate it when I see stories with incredible potential that have been abandoned... seems like such a waste. But I really can't blame the authors since I do the same thing (except my fics aren't that much of a loss, haha).

Let's see...
As a writer, I write one chapter at a time and show my story to readers like that. I want to get feedback on that chapter to see what errors there are, how I can improve it, what they liked, etc.
As a reader, I like both updated and completed stories. Unlike some, I like cliffhangers, unless the author doesn't update for five or so months. That's when I get frustrated. But I also like completed stories, too, but I can't really give feedback one chapter at a time.

Pawn has set the standard I think most will agree with hehe
For me it depends on the length of the story. If its a short story with only two chapters or something small like that then I write it all out and post it together. But yes, if its something like a novel or anything over 10k words that doesn't just flow onto the paper in one sitting then I will post it chapter per chapter.
And I only, only, only read completed works no matter how much I may like the plot. I keep a list of WIP's that I want to read in a spreadsheet hehe and I check them randomly to see if they are done or not. It is sometimes very disappointing to see great ideas never finished but it would be even worse to have read that fic and be left hanging.
