I need to know what each of these is like, so if you have any or all of them please post what they're like.
University?
Bon Voyage?
Freetime?- It isn't all about sports is it?
Apartment Life?
And I already have the Pets one, and Open for business, and Nightlife.

Freetime isn't all about sports. It's about hobbies and what your Sims do in their own free time. Each Sim get's their own predestined favourite hobby based on their personality and star sign.
University mostly takes place away in the university 'hood so it is kinda self contained but you can get zombies, the cowplant and the resurect-o-nomitron to call the reaper to get a zombie.
Bon Voyage is easy to forget about as well as most of the stuff happens at the holiday destinations which are a git to get to and from if you have problems with loading times, but it does mean you can have beach lots in regular 'hoods too.
Apartment life comes with witches and allows several families to live on the same lot at once. Only one family can be played at a time though. It doesn't really alter gameplay drastically.
