It was time to clean out the fridge so I threw some things together and it turned out alright.

1/4 cup rice vinegar
3 tablespoons soy sauce
2 tablespoons honey
1-inch piece fresh ginger, peeled and minced or grated
1/2 pound lean ground beef
10 cloves garlic, peeled and minced
1 1/2 teaspoons chili powder
a handful of chopped green onions
1 head of romaine, buttercrunch, or bib lettuce (used romaine because it was in my fridge but any of the above options will do too)
1 cup rice (any kind will do)

Mix first four ingredients together, set aside. Cook beef until you have almost all the pink gone. Add the garlic and chili powder, cook until all pink has left the beef. Pour in the vinegar mixture, cover, and let sit for 15 min. Give it about two or three stirs during this time so that it doesn't burn. Cook your rice. When the 15 minutes are up stir in the green onions and rice and cook for a few minutes more. Serve with lettuce to roll up mixture in.
