This is the real deal kids. With anchovy. And raw egg. Don't be a squeamish food wimp! It's delicious!
INGREDIENTS:
1 garlic clove (minced) 2 tablespoons lemon juice 2 tablespoons anchovy paste 1/4 teaspoon black pepper 1 egg 1/2 cup olive oil salt to taste
DIRECTIONS:
1. Combine the minced garlic, lemon juice, anchovy paste, salt, and pepper. Whisk to blend.
2. Immerse the egg in a small pan of boiling water and cook for exactly one minute. Remove the egg and crack it into the bowl with other ingredients.
3. Add the oil in a steady stream and whisk until smooth.
Honestly, you can play around with the flavors for this. If you like a more mellow dressing, add more oil. More tart? Add more lemon. More savory and salty? Add anchovy. I often add more garlic.
I like this dressing over a salda of romaine and spinach, with hard-cooked egg and garlicky croutons.

Wow that is almost exactly like my recipe, I also add more garlic. For people who are wimps to the egg part I cut out some oil and use mayo. Luckily I work in a kitchen so I can get pasteurized eggs really easily.
