I'm curious here. My cousin is in college and it surprises me wat lil she can do for eggs in the morning. Mind helping find one that would be easy for her/me?

You can make an omelet and fill it with your heart's desire, or you can be a little fancier and make a frittata. For something super simple, you can cut a hole in a piece of bread and toast it on a skillet and crack the egg in the hole.
My personal favorite egg dish is Spanish eggs. Eggs seasoned with a little salt, pepper, and cumin, cooked over stovetop (lid on) with tomatoes, bell peppers, and jalapenos. Top with almonds.
Make your own egg sandwiches with English muffins, sliced ham, and cheddar cheese? Or, make a Croix Madame, which is a topless ham sandwich topped with a fried egg.
