I'm so behind on anime because it's an expensive hobby and I don't keep track of it on TV as much anymore but here's a list I've seen and enjoyed, be it an entire series or a few episodes:

- Transformers (Gen1, Beast Wars, one episode of Energon), animated Transformers movie, both live-action movies
- Voltron
- Full-Metal Alchemist, FMA: The Conqueror of Shamballa
- Vandread
- Gundam Wing, GW: Endless Waltz
- Evangelion, Death and Rebirth, End of Evangelion
- Martian Successor Nadesico, MSN: The Prince of Darkness
- Sailor Moon (all seasons and movies)
- Pokemon (first season being my favorite)
- Digimon, Digimon movie
- Yu-gi-oh!, Yu-gi-oh! the movie
- Fushigi Yuugi
- Naruto (season 1 only)
- Ghost in the Shell (movie)
- Akira
- Record of Lodoss War
- Dragonball, DBZ, DBGT (a few movies)
- Gunsmith Cats
- Deathnote
- Final Fantasy: Unlimited
- Rurouni Kenshin (season 1 & 2)
- Cowboy Bebop

I was heavily into anime back in the 90's, but not so much recently. I've seen maybe all of part of an episode of Bleach.

Also, it should be worth nothing that while we think of 'anime' as more 'Japanese animation', the Japanese often associate it as any form of animation, including Disney.

Since it would take eons to type out everyone that I've seen only bits of...

By golly i think the only anime i've seen in their entirety is Serial Experiments Lain, FLCL *because it's like... super short crying *, Paranoia Agent, and Azumanga Daioh.

Holy crap that's like nothing.

Oh, and Fruits Basket, but I did that in a day then never watched it again so that's why I forget about it

I've seen:

-Vampire Hunter D and VHD: Bloodlust
-Paprika
-Perfect Blue
-Escaflowne series and film (I love the film for being so gory and ~*edgy*~; allegedly it was made to appeal to male viewers since they hated the show)
-Gundam Wing series and film
-Evangelion
-Monster
-Early Naruto
-Death Note
-FLCL
-Most of Samurai Champloo
-A few episodes of Bleach (krgh)
-Most of Sailor Moon
-Most of Dragon Ball Z up through Cell Saga
-EFFING ROBOT CARNIVAL ugh I loved this but I can't find a DVD
-E.Y.E.S of Mars (awesome environmentalist propaganda)
-First two Tenchi Muyo films
-Lots of other crap that was on Saturday Anime in the 90s
-Ghibli stuff (Kiki, Totoro, Pom Poko, Only Yesterday, Spirited Away, HMC, Ponyo, and that bizarre Earthsea adaptation)
-Other things I don't remember because I saw them 10+ years ago
-Other things I only saw like two episodes of

At this point, I feel very "meh" about a lot of anime that I've seen, even and sometimes especially the stuff that's extremely popular. For instance, I've seen a good number of episodes of Bleach but I pretty much hate it. Then there are the series that I know are qualitatively not that good but I love them unconditionally, anyway (Escaflowne).

Bahamut Yojimbo
- Record of Lodoss War

This show was the bomb back in the nineties because everything else on Sci-Fi Saturday Anime was... well, sci-fi. I remember being mesmerized by Deedlit.

There's a lot more to Lodoss War than the thing they showed on Sci-fi, though, and I never got around to seeing it all because I didn't have the money to buy it, and renting it wasn't possible in this area. In this day and age, I guess I should check Netflix.

Ah ha! I knew people here were gonna jog my memory further! Seen the Escaflowne movie, also the Vampire Hunter D movie. And still more:
- First Tenchi Muyo movie, a little bit of the series, and a little bit of Pretty Sammy
- Oh! My Goddess! series and movie
- Chobits
- A little bit of Angelic Layer
- Some YuYuHakusho
- The Conan detective one?

I have a few manga of Azumanga Daioh but...that's about it.

Muahaha, my platinum box set of Evangelion is autographed by both Asuka's American and Japanese seiyuu. Got it at the last convention I went to, w00t!

Studio Ghlibi stuff: Princess Mononoke, Spirited Away, Pom Poko, Kiki's Delivery Service, part of Howl's Moving Castle, Laputa, Nausicaa: Valley of the Winds, and Totoro. (interesting to note that I watched almost all of these in my Japanese 3 and 4 class back in HS. My sensei rocked! XD)

That first Tenchi Muyo movie changed my life. I'm dead serious; at that age I didn't know anything could be so awesome. I wonder if it'd hold up if I saw it again today.

The second one, on the other hand, was weird and unpleasant to watch due to the incestuous overtones.

I'm actually not a fan of Evangelion (but I don't regret watching it or anything like that).

Evangelion was a big deal for me because it was the first anime I prefer dubbed than subbed because the perverted jokes and comments just sound better in English lol.
