This recipe is about the fruit, not what you put it on, so consider frozen baking powder biscuits or pre-made mini-shortcakes or, quickest of all, eat it with a spoon.

1 1 lb container fresh strawberries, sliced
1 cup chopped fresh pineapple
2 kiwi fruit, peeled and chopped
1/4 cup sugar
1 Tbsp chopped fresh mint
1/2 tsp lime zest
1 Tbsp fresh lime juice
1/2 cup whipping cream
1 tsp sugar
baking powder biscuits, warm or pre-make shortcakes

Combine first 7 ingredients; let mixture stand 10-12 minutes, gently stirring after 6 minutes.

While you’re waiting, beat whipping cream and 1 tsp of sugar at medium speed with an electric mixer until soft peaks form. (Use immediately, or cover and chill up to 2 hours.)

Place warm biscuits or shot cake on dessert plates, and spoon the wonderful mixture over them.

Serve immediately with whipped cream or, if you like, split biscuits, and spoon it over them; top with whipped cream and remaining shortcake halves.
