Because Christmas isn't the only holiday out there. There is Yule, Saturnalia, Sol Invitius, Kwanza, Hannukah, etc. The words Happy Holidays encompanies all holidays celebrated by different religions.
The true meaning of Christmas is not about Jesus' birth. That's a common misconception. Christ was not born on the 25th but sometime in the spring or fall. If you look at the Bible in the passages detailing Christ's birth and examine the astrological signs, as in the position of the stars, etc, and realize that herding is commonly done in the spring, summer and fall, then you would understand that time of his birth was not in the winter. It's impossible for it to be in the winter.
The origin of Christmas is actually pagan. In fact the week long holiday of Saturnalia which according to our calendars ran from Dec 17th all the way to the 21st. The activities that occured was bringing shrubbery in and decorating the home, and gift giving. Dec 25th was not only the Winter Solstice according to the Julian Calendar but the holiday Sol Invictus. Sol Invictus was the celebration of the Birth of the Sun, or the Sun God.
Early Christians decided to meld the two holidays together and call it Christmas in order to convert the Early Pagans easily. However over the years people have forgotten why Christmas was put in place or neglect to study the actual origin of their holiday and their own savior.
The meaning of Christmas is not about Christ, but being together with family and receiving gifts. That has always been the true meaning of Christmas dating back to the Roman Pagans.
Saying Happy Holidays is being respectful to people who are not Christian and do not celebrate Christmas.
I stopped celebrating Christmas after the death of my dog who was a member of our family. Humanity has learned, over the past 1500+ years or so, to show compassion towards those who are different than them. To be understanding and tolerant. Previously, the common thought was to murder those who were different than them. If you were a Pagan then you were either drowned, tortured, stretched on the rack, thrown in an Iron Maiden, burned at the stake, etc.
In other words, people have come to understand what it truly means to be Christ-like and really encompass the question "What Would Jesus Do?"
What do you think Jesus would do? Would he be ignorant of other people's beliefs and feelings, and say Merry Christmas? Or would he be compassionate, caring, tolerant of other people's beliefs and say Happy Holidays?
If you think Jesus would do the former then you need to re-think your answer and your beliefs. It seems you would rather wear your heart on your sleeve and abuse the title of Christian which means "like-Christ" or "Little Christ". Also examine this quote "I like you Christ. It is your Christians I do not like. They are so unlike your Christ"-Gandhi.
If you think Jesus would do the latter, then congrats. You understand the meaning of being a Christian and do follow the Law of Agape. You are truly like-Christ and I wish you well on your path. ^.^
