As easy and simple as it sounds, really.
I had leftover cooked Jasmine rice, Japanese-style curry, and eggs and cheese in my fridge and not much else.
I took a large bowl, layered the rice on the bottom, then covered it with shredded mozzarella and sharp cheddar cheese. I fried two eggs, seasoned them with garlic salt, pepper and a sprinkle of curry powder, and put them on top of the cheese. I then heated up the leftover curry and spooned it over the whole mess.
With chopsticks, I stirred it up, breaking up the eggs here and there by scissoring them.
The end result? I really delicious bowl of mixed-up goodness. biggrin
