Asian Sweet and Spicy Meatballs Ingredients 1/2 cup finely chopped water chestnuts 1 teaspoon of peeled and finely chopped ginger root 1/3 cup finely slice green onion 1 clove of garlic chopped finely 1 1/4 pounds of lean ground beef 3 Slices of white bread 3 Tablespoons of soy sauce 3/4 cup of plum sauce or plum preserves 2 tablespoons of Siracha sauce (more of less depending on taste)
Preheat the oven to 400°. Mix together the water chestnuts, gingeroot, garlic, green onion, beef, bread (slightly moistened with water) and the soy sauce. Make sure that all of the ingredients are mixed together well before shaping the mixture into small balls and placing them on a parchment lined baking sheet. Place them in the oven and bake for fifteen minutes. While they are baking mix together the plum sauce and the siracha sauce in a medium sized bowl. Pull the meatball out of the oven and place them in the bowl containing your plum sauce mixture. Toss until they are evenly coated and then place them back on the baking sheet and bake for 15 more minutes. Let them cool for about five minutes before serving. Makes 40 meatballs. Serving size 4 meatballs.
