I like the Final Fantasy series, though there are a couple I still want to play (namely VI). Here's the thoughts on the ones I have played:
I and V- Call me spoiled, but I can't play games with such low graphics. If there's no CG cut scenes...I lose interest...which is what I did with these two games.
VII- I like this one...just not as much as everyone else does. Sure, I think Sephiroth is awesome, and the story is really good, but I don't think it's the best in the series personally. Still, fun to play through.
VIII- I can't stand the battle system on this game. And the story doesn't interest me enough to struggle through it.
IX- I loved this one. It had one of the best battle systems and the story was a good mix of comedy and drama. Lots to explore in this game.
x- The first one I've ever played, so it has a special place in my heart. Probably my favorite of all time (and the only reason I struggled through X-2). I liked this battle system the best considering I was a newb to the series. I also loved the story line...and Rikku.
XI- To this day, I still don't understand why they thought this was a good idea. I have a copy, and to play this game takes way too much extra money...and I believe in only paying for a game once...
XII- I can't decide if I hate this more or less than VIII. I managed to struggle through this game. Time: 120+ hours...and I still haven't 100% everything on there yet. I did manage to kill Yiazmat...after 5 hours! And it may have been interesting if I had actually done anything...but considering the crappy battle system, the computer does everything for you. No ******** this game........Fran's cool though.
XIII- I really like this game, but there are several parts I don't like. Namely how, later in the game, the only places you can really explore are Gran Pulse (which is a cool place actually) and the last little bit of the game (a small part of Cocoon and Orphan's Cradle). Even X let you go back to all the places you've been to once it got through it's linear story. XIII is super linear. I have mixed feelings on the battle system. Part of me wanted to be able to use certain skills outside of that job class (namely heal)...but it did make things interesting...and more challenging. Still, despite it's flaws, it's a great game with a great (and at times, moving) story.

2,3,4- I liked all these and still own two of them.
VII- My only complaint is that the people looked like Popeye when they weren't in battle. I maxed out the timer and have beaten all the Weapons.
VIII- Loved the Card game once I got a decent deck and figured out the junctioning. I currently have a party of characters that are near immortal and beat Omega Weapon in 5 minutes flat.
IX- Have yet to play
X- Too much change for my taste but nice story.
X-2- It was like a bad Charlie's Angel's remake and couldn't stick through and finish.
XI- Yet to play.
XII- This made me lose interest in future titles so I've yet to play any beyond this.

The only Final Fantasy I've played is VII... I'm actually obsessed with it...Hehe.... ^^,

Here we go...
I - Was alright for what it was. Had a blasty finishing it. My god was the original one hard
II - Difficulty that will pimp slap you. Take a wrong turn and BAM! You just lost an hour and a half of game time due to immensely strong enemy
III - Introduction of the Job system that would appear in V and Tactics. Story left much to be desired for me.
IV - Here the story gets good. Good strong cast with Cecil and Kain being major badasses.
V - Take the job system from III and put it on steroids. Good story. First use of recurring boss fight with Gilgimesh. Throw in some great music (Battle on Big Bridge) and there's a game you can sink a long time into.
VI - The Holy Grail of Final Fantasy to me. The story, character development and gameplay are all stellar. Any and all fans of RPGs should play this one. If you're a graphics whore, swallow that, and just play through it once. Nothing really seems forced in the game and it just flows nicely.
VII - Good game. Over-hyped, sure, but still good. Very good soundtrack and the optional bosses give a nice challenge to the hardcore players.
VIII - Top 3 in the series for me. Triple Triad is possibly the most fun side game in any of the FF games. Tetra Master (IX, XI) can bite me. The Junction system was a nice change of pace from the Magicite/Materia systems from the past 2 games. All in all, a refreshing change of pace for me.
IX - Pretty unmemorable for me. Finished it, and now, can't remember anything from the game. Only one song from the game comes to mind for me as well. *shrugs*
X - First foray into voice acting for the series. While good, there are some parts that just make you go WTF. (Forced laughter causes ear bleeding). And the Sphere Grid was a nice touch. I never spent the time to max characters myself, but some people with the right strategies/time could do it I suppose. Blitzball is my second favorite minigame in the series, haha.
X-2 - Moving right along...
XI - Played it. Has a decent learning curve. When I played, talked to some people who played WoW before, and they complained about the difficulty... a lot. Crafting was good fun for me, but that's because I was only on for short periods.
XII - This one, I'm on the fence about. I like the concept of the story. It seems more... adult than the other ones. But the License Board irks me in some way.
XIII - Hyper-linear. No choices for dialogue (Acceptable for a JRPG). But the real kicker is the lack of exploration. Running down corridor after corridor was annoying. While the job system in this game isn't as robust as others, it certainly is expansive.
Tactics - My number 4 game. The PSP remake of the original Tactics makes the game so much more enjoyable. Not to mention that the inclusion of Balthier is just cherries on top of an already delicious Strategy RPG sundae.
Chrono Trigger - Never saw the ending. My memory card got corrupted right before I fought Lavos. Everything before that was solid.
Chrono Cross - Never even beat the first disk. The battle system is actually pretty clever, and requires planning on the part of the player for tougher fights.
I've played too many FF games in the past 6 years, since I started playing RPGs

Here goes something.
I-III: Haven't really touched.
IV: Say what you will, IV is by far the best in the series. Several remakes (the DS remake is impressive), a good storyline, and great characters.
V-VI: Didn't really play.
VII: As popular as this game is, surprisingly, I didn't enjoy it. I keep trying to find a reason why I didn't enjoy it, but nothing comes to mind. The gameplay was good, but the characters...ehh...I guess its because I keep comparing VII to Legend of Dragoon, and LoD keeps beating it.
Dirge of Cerberus: Now THIS game I enjoyed. Nice to have a completely new style to a good franchise, and I think they did a good job of it.
VIII-IX: Haven't played yet, but intend to.
X: Excellent. 'Nuff said.
X-2: I pretend this one never existed.
XI: Haven't played. Probably won't either.
XII: I bought it thinking it would be good. I was sorely mistaken. I felt they could have simplified the job system, and, much to FF's dismay, I. HATE. RAILROADING.
XIII: Another game I probably won't play.
Chrono Trigger: Haven't really played much of it.
