I have a question.. When I'm talking to a deity, I'll just say/ask whatever, and get almost an immediate response. Would a prayer be something more like mailing a letter?

Oh, most definitely. I pray several times a day to several different deities within my pantheon. I do both formal, and informal prayer for the gods. The structure of formal prayers goes like this:
"Hear!" Then name the god or goddess you are praying to, with as many as the appropriate epithets as you can. Often, if you forget a title/epithet, the you can simply add "Or by whatever name you wish to be known" Justification for calling on the deity; I.E. citing previous help from the deity and/or pleasing acts you have done in the deity's name Make a clear, concise request Then a vow is made, which the petitioner is bound to carry out if the deity brings about the requested outcome *OR* you can make an offering to the deity in question if you have the means to.
Informal prayer is an individual thing, and I usually opt to stay with the formal prayer. I do use simple invocations, such as when I pass my altars I make as if I'm blowing a kiss, and sometimes in moments of shock, and I'm by myself, I'll say something like "Herakles!" in much the same way some christians will say "Jesus Christ!". I won't do that in public, however, because shouting out the name of an ancient Greek Hero will make heads turn, and questions will be asked. I'll also use a set of Komboloi(Greek worry beads turned prayer beads by me) to pray to the god/dess the beads are dedicated to.
The stance for prayers is pretty nifty, too. General, when praying to the "heavenly" gods, You're standing with your arms out stretched and palms up. For sea gods, You stand with your arms out stretched with your palms towards the sea and/or water source.
You aren't required to say the prayer out loud. You can say them in your mind, or write them down.
Prayers can also take form of hymns. One example of these would be this Homeric Hymn to Zeus: Quote: XXIII. TO THE SON OF CRONOS, MOST HIGH (4 lines)
(11. 1-3) I will sing of Zeus, chiefest among the Gods and greatest, all-seeing, the lord of all, the fulfiller who whispers words of wisdom to Themis as she sits leaning towards him.
(1. 4) Be gracious, all-seeing Son of Cronos, most excellent and great!

Would a prayer be something more like mailing a letter? No. What you're doing when you're talking to a deity is praying. Some prayers are just more formal than others. Oh. Then I guess I do pray sometimes. Just I've never done anything formal. I've thought about it, but don't see a need to yet.

Why don't you like to consider them that way? Do you define prayer a different way?

Why don't you like to consider them that way? Do you define prayer a different way? Just because to me prayers are formal communications that I do for the gods with a specific point behind it. Just to have a conversation with them to me is just not the same thing. I know some people will feel that prayers can be informal and conversations, I just don't feel that way. When I get up in the morning I perform a specific routine and prayer. If later when I'm relaxed and meditating and I have a conversation with a deity it just doesn't feel the same.

I have small prayer-like incantations I say when I annoint myself with some of the bindrunes I've created for specific purposes. Aside from those I don't really pray.

I just made a set of prayer beads so that I could remind myself to spend a little time with my Gods each day. I need the discipline.
My prayers are pretty informal and unstructured. Just like me I guess smile . If my Gods wanted formal interaction then I would give Them that but right now They seem ok with chitchat
