Ok, If you have ever tried Pindo Palm Jelly, alone, it's very tart and not very sweet, but a good alternative to putting it on toast in cookies. Use a simple cookie batter, and press on to your cookie sheet. Use your thumb to make little bowls out of the batter and scoop in some of the Pindo Palm Jelly. After the cookies are baked, the jelly is much sweeter and not tart anymore! This is similar to Thumbprint cookies or Jam cookies, and it tastes delicious!
