I realize I'm a fairly inactive gaia member, but veterinary technology is keeping me busy ... and graduation is just around the corner.
I've recently started dating a wonderful guy that my best friend set me up with on my birthday celebration at the end of September. It's been going well so far, but there's one big difference between us ... he's a vegetarian and I'm clearly not. It makes dinner dates, and making dinner a little difficult ... we eat a lot of rice, stir fry and pasta simply due to financial and time reasons.
I bought a 30 minute vegan cookbook in chapters the other day, but I haven't had as much time to go through it as I would like. The school work is just a never ending process.
I'm looking for all your best vegetarian / vegan recipes!!
Please someone help me, I am getting very sick of stir-fry and pasta!

Broccoli Casserole is a good starchyish thing other than stir fry and pasta, and can be used in place of them. And Its very simple!
You need: Broccoli Cheese (Cheddar or Colby. Colby is best) Cream Of Mushroom Soup Club crackers
Cook the broccoli. Mix Broccoli with cream of muchroom soup some cheese, and crushed Club crackers. Cover with cheese(the more the better). Bake until cheese is melted. Serve.
Also you could try Potatoes(flakes are really easy, and cheap). Then you could always buy the Herb Gravy packets at the store if you do not want to use a meat/ meat flavored gravy(I'd look at the ingredients to tell if it has meat in it, because i dont know).
