Ok so I recently found out about EV training since HG/SS and that was my first encounter with the idea. I had no idea what EV training was and to my knowledge it was REALLY hard when I tried learning it. People said it sounds hard but it really is easy. So after this whole long research and experimentation, I wanted to know, and I'll make it quick. If I fight 15 tentacools with my eevee, with pokeruns equipped with the correct power item for Spec. Def, then unequip the item, and use rare candy, will it count?
That's how I see it. Please let me know if I'm doing it wrong D:

I'm pretty sure rare candies level the pokemon up with it's current EVs, but it's best not to use them at all, right? I don't EV train on purpose though, so I don't know much about it either. Nobody I play against even knows EVs exist. xD

For the record, don't use the Macho Brace in HG/SS. Only gives out Defense EVs, regardless of Stat EVs.
Power EV Items works much better.

The wonderful Eri Crimson made a nice little guide here explainin IVs & EVs
and yeah you dont really want to use rare candies, they just increase the level of your pokemon, and dont really do anything else. So its best to not really use em white you are EV training

Rare candies are fine to use for 2 purposes
1 Leveling your Pokemon up to a level where it will beat the wild Pokemon you are battling
2 And after you finish EVing to finish raising it to level 100
If you level with Rare Candies to 100 Before you EV train there is no way to put the maximum Evs on any stat, the best you can get up to is 100 with Protein, Iron, Ect

X_P If I fight 15 tentacools with my eevee, with pokeruns equipped with the correct power item for Spec. Def, then unequip the item, and use rare candy, will it count? ♥ | Yes. Rare Candy does not have any EV erasing properties--- it simply raises the level of a pokémon.
Now, if you wanna know how many EVs you're getting...well, Tentacool yield 1 Sp. Def EV under normal conditions. Then, since Eevee is wearing a Power Band, you must add 4 Sp. Def EVs after every battle regardless of what pokémon you battled (you could fight a Margikarp, which yields 1 Speed EV, and still get +4 Sp. Def EVs from the Power Band). Pokérus doubles ALL of this. Thus, 1(2) + 4(2) = 10. Defeating 15 Tentacool will give your Eevee 150 Sp. Def EVs. : 3 | ♥

I only use rare candies to evolve pokemon. Like example: A charmeleon to a charizard, when is only one more level to evolve, I use it. Especially on pokemon that evolve by friendships. When I know the level of friendship is high, I use a rare candy.
I'm a EV nub myself. I saw a long guide here in the guild and I still don't get it.

Macho Brace doubles the amount of EVs you gain from a battle. So if you fight 1 Tencool, 1 Sp. Def * 2 = 2. It stacks with Pokérus--- so fighting 1 Tentacool will give you 4 Sp. Def EVs at best holding Macho Brace. | ♥

Atk EV. Defeat 4 Psyducks, get 4 Sp. Atk EVs. Every 4 EVs add 1 pt. to a pokémon's base stat. The most EVs a pokémon can gain on any given stat caps at 255. The most EVs a pokémon can gain on all stats in sum is 510.
I think the long guide is just for various clarifications... | ♥
