Me, personally, I don't think anything can beat Sylph and Fighting of the Spirit. Decisive is also quite awesome.

I liked the Take up the Cross. It was fast and exciting, and got your blood pumping for each battle.
Of course, as you said, Fighting of the Spirit beats most.

Decisive, for the reasons I stated in the ToP Official thread.
After that, probably Threatening Sky. It was technically the only other battle theme in the game. One could say "'Open Fire' could work too!". Not exactly, it also plays at the Colisieum, so I associate that song with the colisieum mostly.
Plus, different method of battle, different battle theme. Makes sense.
Anything else?
Take Up the Cross, =P. Everytime I listen to the REAL PSX version I always say, "Satsugeki Bukouken!" because of that one video on Holystar's site, XD.

Take Up The Cross
Decisive
Fighting of the Spirit
and Dhaos Castle where my Favorite. And I feel Dirty becuse I like Symphonia Version of Fighting of The spirt Better thene ToPs but Tops version has the kick a** solo part.

Crap! As usual, I only looked at battle themes.
OTHER than battle themes:
-Sakuraba Solo
-Ressurection (Just because it's probably one of the darkest villain themes I've heard, which is ironic because....)
-Arche (GBA version, =P)
-Martel
-Good Wine Makes Good Blood
-Suzu
-Go Over Adversitary (sp?)
-RIDGE RACER!

I really liked the opening theme (NOT the actual opening. The thing that plays during the Title Screen.)
Dhaos' Castle, and Aviators are also personal favorites.

I'm a big fan of 'Hydropolis' and 'Fighting of the Spirit'. And 'Take up the Cross', natch. Sakuraba's Solo is also fun.
